How to update directory?

I have an Adtran IP712 Phone:

P/N: 1200770E1#B

06             LBADTN0831AD275

SERIAL #:      00A0C838E32A & 00A0C838E593

When I press "132" for on my phone it display "Jed" on the screen but he hasn't been with our company for 3 years. Beth is who sits and answers at extension "132" but how do I get my phone to display that?

1. How do I go into the multiple phones we have and update the first/last name field for all our internal extensions?
2. Do I have to do each at once or can all be down remotely at once?
