I'm looking for help in troubleshooting using the logging or debugging features on the 3120.

I'd like to be able to watch somehow how the 3120 is handing all traffic from specific IPs.

For example I have a SIP phone on the LAN  that connects to a sip server on the public internet.

How can I log/see all the traffic for these two devices? ICMP, SIP, everything?

Thank you for asking this question in the support community.  There are multiple ways to monitor traffic through ADTRAN units.  This can be done by debugging specific access-control lists (ACLs), debugging IP packets, the packet capture feature, as well as other methods.
